This was just beyond amazing! 

Ingredients
  1. 1/2 cup Seitan
  2. 1 Tortilla 
  3. 1/2 cup arugula
  4. 1/2 cup cheery tomatoes
  5. 2 Tbs Yogurt
  6. Balsamic vinegar
  7. Mustard
  8. Spices: Pepper, Garlic Powder, Cumin, Paprika, Onion Powder or a greek or Gyros mix if you can find it
  9. Olive oil or grape-seed oil
  10. Agave syrup (optional)

Instructions
  1. Spray pan with oil, once it is heated add your shredded seitan. Add spices to taste, fry it up :)
  2. In the mean time, add Yogurt, Balsamic vinegar, mustard and pepper and mix up to make the sauce. Add a splash of agave syrup if you would like 
  3. Load up your tortilla with all ingredients and enjoy!
