Lettuce Fajita Tacos

Ingredients (2 servings):
8-10 lettuce leaves
1 tomato
2 cups sliced bell pepper
1 cup refried beans
1/2 cup black beans
1/2 onion, half chopped, half sliced
1/2 mango
1/2 avocado

1 tsp agave syrup
1 tsp oil (I use olive or grape seed)
2 Tbsp Balsamic vinegar
splash of lime juice
Cumin, pepper, taco seasoning

Instructions
  1. Combine chopped onion, mango, tomato, cumin, pepper and lime juice. 
  2. Heat beans with taco seasoning
  3. Saute or grill sliced bell pepper and onions in oil on high heat. About 2 min in, add balsamic vinegar and agave syrup to glaze them.
  4. Mush avocado
  5. Layer all components on lettuce
  6. Happy dance while you eata
