Seitan on a bed of everything

Ingredients
  1. 2 cups of your favorite veggies! I used bell pepper, zucchini, tomato, arugula, broccoli 
  2. 3/4 cup seitan
  3. 1 cup of fruit of choice. I used figs but apples and nectarines would go nicely with this too
  4. Dressing: 1 tsp cashew butter (peanut is fine), 1 tsp olive oil, balsamic vinegar, pepper, italian spice mix
Instructions
  1. Grill Seitan
  2. Chop up veggies and fruit while your seitan is getting just right
  3.  Combine dressing ingredients and mix up
  4. Arrange on plate and enjoy (7 min prep time, super quick!)

21 Day Fix (vegan/vegetarian)
         1 red
         2 green

         1 orange

Optional: add some nuts for extra texture and taste (+ 1 blue)
