Stuffed Shells on CHEEEZE Sauce

Ingredients (4 servings)
1 sweet potato
1 cup carrot
1 onion
Pasta shells
3 cups Seitan
1 bell pepper
Garlic Lover Spice (I used 
Flavor God) or alternatively: 1 garlic clove
1 tbsp mustard
A dash of cayenne 
1 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Nooch
Balsamic glaze


Instructions
  1. Peel and cut sweet potato, half of the onion and carrots. Cook for approximately 20 min. The thinner you cut them the faster they cook.
  2. Cook pasta shells according to package.
  3. Cut up and sautee seitan, other half of onion, and bell pepper. Stuff shells when they are done.
  4. Scoop out veggies, save the veggie water.
  5. Put all ingredients into food processor and blend well. Add nooch as neccesary to amplify cheesy taste. Add veggie water until desired consistency.
  6. Place shells on sauce, glaze with balsamic.
